When I think about all foods that I truly love to eat, and there are many, I have to keep coming back to the humble banana as my favorite. For some reason I never get sick of this mild sweet fruit. Whether slicing them over my breakfast cereal, slathering them with peanut butter, or putting them in the bottom of a pie, they suit me perfectly. Fruit salad is lost without these sweet yellow pieces and smoothies are much sweeter with them.
I have never liked banana flavored things though. I've tried banana flavored gum, skittles, even tic tacs! But that flavor is less than acceptable.
Baking with bananas is something I have always enjoyed. My mom had a banana cake recipe that I still use when I have overly ripe bananas. Maybe you'd like it!
Banana Cake - Dale's favorite (Mom loved to make note of who loved special recipes. In this case it was my brother.)
1/4 cup butter
1 cup sugar
1 cup mashed bananas
1 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
Cream butter, add sugar and cream until smooth and creamy. Add vanilla. Add eggs and beat until well blended and creamy. Add bananas and mix well.Sift together dry ingredients. Fold into first mixture. Pour into well greased 9 x 9" cake pan. Bake in preheated oven 350 degrees for 30 minutes.
